Sugar Free Oats Kheer

Oats are complex carbohydrates as well as  gluten-free whole grain. They are great source of important vitamins, minerals, fiber and antioxidants. There are many health benefits of  eating oats. Generally it is consumed as oats meal or porridge. Today i would like to share with you its different version of very famous Indian dessert  called "Kheer"

Ingridents:-
  • 1/4 cup Oats
  • 1 cup Milk
  • 1 tsp Ghee
  • 1 tbsp Honey
  • 2-3 Saffron strands
  • 1/4 tsp cardomon powder
  • 3 Almonds sliced
  • 3 Pistachios sliced   

Method:-

Step1
In pan roast 1/4 cup oats with 1 tsp ghee until oats colour changes to light brown. (appox 1-2 min)

Step 2
Add 1 cup milk and mix well

Step 3
Simmer it untill oats soften (appox 5-7 mins).

Step 4
Add 2-3 saffron strands, 1/4 tsp cardomon powder, sliced almond and pistachios. Mix well.

Step 5
Lastly at add 1 tbsp honey and switch off the flame.

Garnish it with chopped almonds and pistachios. Oats kheer is ready.

Pressure cooker Sooji cake

Today i will share recipe of sooji sponge cake on a great demand of my friends. It is very easy to prepare and it does not required oven. You can serve it warm or can enjoy it with your dear and near ones with a cup of tea.


Ingredients:-

1. 3/4 cup Sooji ( samolina)
2. 1/2 cup Curd 
3. 3 tbs milk powder
4. 1/2 tsp cardamom powder
5.  Less than 1/2 cup powdered sugar
6.  3-4 tbs  fresh milk
7.  2 tbs dry fruits( almond and cashew nuts)
8. 2 tbs Ghee ( clarified butter)
9.  1 tbs Tutti-frutti
10. 1/4 tsp baking soda


Method:-

Step 1:-

In a mixing bowl add  all dry ingredients:- sooji, milk powder, sugar and cardamom powder and give it a mix.

Step 2:-

Add curd, ghee, dry fruits and tutri-frutti to form a batter with required amount of fresh milk. Keep it aside for 10-15 mins.

Step  3:-

Lastly add baking soda and mix it well. Add batter to greased cake container.

Step 4:-

In pressure cooker put a stand and add water. Allow it to bowl then put the container on the stand in the pressure cooker.

Step 5:-

Remove ring and whistle of lid and then close the cooker. Allow it to cook for 15-20 mins on a slow flame.

Step 6:-

Before switching off the gas flame, check the cake with the help of knife. If it comes out clean then it is ready.

Enjoy  mouth watering cake with your dear and near ones.

Pink Oats Idli


Oats are one of the world's healthiest and most nutritious foods. Its a complex carbohydrates and has many benefits for weight loss and good health. Today, I will share with you different way of using oats to make healthy and tasty recipe. And I named it as Pink Oats Idli.
Ingredients:-

1. 1 cup Oats
2. 1/2 cup Semolina
3. 1 cup Curd
4. 1 cup water
5. 1/2 tsp pepper powder
6.  Salt as per taste
7.  1 inch ginger
8.  1/4 Beetroot
9.  1/4  Green bell pepper
10. 1/4 Carrot
11. 30 gms Cabbage
12. 1/2 tsp Baking soda
13. Oil (for greasing)





Method:-

Step 1

Make powder of 1 cup roasted oats in a mixer grinder. Take a mixing bowl, add  oats powder, semolina and curd. Also add grated ginger and make a smooth batter  with the help of water.

Step 2

Fine chopped all the vegetables in a  vegetable cutter and add them to the batter.

Step 3

For seasoning add pepper powder and salt as per taste. Finally add baking soda and mix it well. Our pink idli batter is ready.

Step 4

In a steamer add water and bring it to boil on high flame. Meanwhile grease idli moulds with oil and pour the batter. Steam idli in the steamer for 5-10 mins.

Enjoy hot and tasty Pink Oats Idli with sambar or coconut chutney.

Rice Cutlet

Leftover food especially rice is very common in our household. Don't be so dishearten, today i will share with you very easy and tasty recipe of Rice Cutlet. You can make this recipe as tiffin or breakfast or as snack.




Ingredients

1.  1 cup cooked rice
2.  1 boiled potato
3.  1 chopped onion
4.  1/4 cup green peas
5.  1/4 cup grated carrot
6.  1/4 cup coriander leaves
7.  2 tbs corn flour
8.  1/2 tsp turmeric powder
9.  1 tsp red chilly powder
10. 1 tsp chat masala
11.  Salt as per taste
12.  1 tsp ginger paste  
13.  1 tsp cumin powder
14.  1/2 lemon juice
15.  Oil

Method:-
  
Step 1

In a mixing bowl take 1 cup of cooked rice (leftover rice), mash it properly.

Step 2

Add 1 medium size mashed boiled potato (If not then, use grated raw potato), 1 finely chopped onion, 1/4 cup boiled green peas, 1/4 cup grated carrot, 1/4 cup finely chopped coriander leaves. (You can add your favorite veggies here)

Step 3

Its time for some seasoning so add salt as per taste, 1/2 tsp turmeric powder, 1 tsp red chilly powder,  1 tsp chat masala, 1 tsp ginger paste, juice of 1/2 lemon and 1 tsp cumin powder.

Step 4

Add 2 tbsp of corn flour as binding agent and mix it properly to form a dove consistency mixture.

Step 5

Grease your hand with oil, take a portion of mixture and make ball of it and then flatten them into round shape. Likewise make few more cutlets from the mixture.

Step 6

In a nonstick pan shallow fry them with oil.

Enjoy  yummy and taste rice cutlet with green chutney.

Ganesh Chaturthi Special- MODAK

As I started with this blog  many of my childhood memories got trigger. I used to wait for ganesh chaturthi because it was the only day of the year when my mother prepare modak.  At that time highlight of ganesh chaturthi were modaks, nothing else.

Modak is a sweet offered to lord Ganesh as prasad during Ganesh chaturthi puja. It can be prepared by many different ways for example; steamed modak, fried modak, molded modak etc.  Today I will share with you all my fav fried modak recipe. Outer layer will be made up of all purpose flour and stuffing will be of dried coconut mixed with sugar. 


Ingredients:-

1. All purpose flour
2. Grated coconut (dried)
3. Powdered sugar 
4. Raisins
5. Cardamom powder
6. Ghee
7. Milk
8. Milk powder
9. Oil

Method:-

Step 1:-

For outer layer we need to prepared a dough. In a bowl take 1& 1/2 cups of all purpose flour, add 3 tbsp of ghee and mix well with your fingertips till you get breadcrumb like texture of the mixture. With the help of warm milk (approx 1/2 cup) knead a soft dough. Grease the dough with ghee and set aside.

Step 2:-

Stuffing:-

Take 4 tbsp of ghee in a non stick pan. Add to it 1 cup of grated dried coconut, 1/2 milk powder (preferred mawa (koya)), 1/2 cup of powdered sugar, 1/4 tsp cardamom  powder, 1 tbsp  raisins and cook it for 2-3 mins on a low flame till it turns light brown. Keep aside and allow it to cool.

Step 3:-

Take small portion of dough by which you can able roll out approximate 3''- 4'' diameter puri. Then put 1 tbsp stuffing on it and bring all the sides of puri in the center and seal it with pinch.

Step 4:-

Repeat step 3 to make few more modaks.

Step 5:-

Heat oil in a deep non stick pan, deep fry few modaks at a time till they turn to golden brown. 

Offer Lord Ganesh his favorite Modaks and you all enjoy them too.

Cheesy Minity Pasta

Pasta is traditional Italian cuisine. There are approximate 90 varieties of pasta available in market. Its a great ingredient for quick and delicious dishes.  Combining specific sauce with appropriate type  of pasta is a challenging job. Here i am sharing one of my favorite pasta recipe. It is called "Cheesy Minty Pasta".

Ingredients

  • Pasta
  • green bell pepper
  • onions
  • garlic
  • mint leaves
  • coriender
  • green chilly
  • cheese
  • milk 
  • water
  • butter
  • salt
  • corn starch
  • black pepper powder
  • oregano 
Method

Step 1

To Cook Pasta:-

In a vessel  take 4 cups of water and bring it to boil. Add 1 cup of raw penne pasta, salt and 4-5 drops of oil. Cook it for approximately 5-6 mins, check (if you are able press pasta by your fingers easy then its cooked) and  turn off  the flame. Drain off the excess water and rinse it with cold water. Set aside.

Step 2

To Make Sauce:-

  1. In a mixer jar take 1 cup of mint leaves, 1/2 cup coriander leaves and 1 green chilly. To make smooth paste add 4 tbsp of water.
  2. Take 2 tbsp of butter in a non stick pan. Saute 1 tbsp of finely chopped garlic on medium flame. Once it start releasing garlic flavor add finely chopped onion ( appox 2 medium size onion) and 1/2 green bell-pepper( julienne cut- long and thin cut) saute it for 2 min.
  3. Then add green paste we have prepared earlier. 
  4. Add one cup of milk as well as water and stir it. To achieve saucy consistency, dissolve 1 and 1/2 tbsp of  corn starch in minimum amount of water required.
  5. Stir the mixture till it achieve saucy consistency. Then add 3 grated amul cheese cube (approx 75 gms). For seasoning add 1/2 tsp black pepper powder, 1 tsp oregano and salt to taste.
Step 3
 
In the final step add the boiled pasta into the green pasta sauce. Mix  well and serve it hot. 

Enjoy cheesy minty pasta with your dear and near ones.

Rakshabandhan Special

Festivals are the heart of people's lives in India. They reflect richness of Indian culture. And festival   without sweet is next to impossible here. So today i had prepared milk powder burfi on special occasion of Rakshabandhan for all my brothers and sisters. Lets have a look to its recipe.


Ingredients:-

  •  Milk powder 2 cups
  •  Sugar 1/2 cup
  •  Milk 1/2 cup
  •  Ghee 4 tbsp
  •  Pistachios
  •  Sliced almonds
  • 7 Cardamom powder 1/4 tsp


Method:-

Step 1

Take non stick pan, add 4 tbsp ghee and 1/2 cup milk and allow it heat for a minute on low flame.

Step 2

Add 2 cups of milk powder, 1/2 sugar and 1/4 tsp cardamon powder to it. Stir continuously to get rid of lumps so it will be a smooth mixture.

Step 3

Most important thing is you have to stir it continuously on low flame till it reduce to dough form ( it will take approximately 15-20 min). Once it is done mixture will leave the pan surface and it's colour will change to  light brown.

Step 4

Grease a plate with ghee and spread the mixture evenly in it.  Garnish it with pistachios and sliced almonds. Cool it down to room temperature and then cut into pieces.

Milk powder burfi is ready to serve. Enjoy it with your dear and near ones.

Instant Sabudana Wada


Sabudana vada is traditional and very famous Maharashtrian recipe. It is generally served during fast or vrat.

Ingredients

Sabudana or Sago 200gms
2 boiled potatoes 
3 green chilles
1 inch ginger
7-8 curry leaves
1/2 cup coriander leaves
1/2 cup roasted peanuts
lemon juice
1&1/2 tbsp sugar
Salt
Oil for deep frying 

Method:-

Step 1

Wash and soak 200 gms sabudana in warm water (till the level of sabudana) then leave it for 10 mins

Step 2

Meanwhile in a mixer jar make coarse of 1/2 cup roasted peanuts, 3 green chilies, 1 inch ginger, 1/2 cup coriander leaves and curry leaves.

Step 3

Add the prepared  mixture, 2 medium size boiled & peeled potatoes, lemon juice ( 1 medium size), 1 1/2 tbsp sugar and salt to soaked sabudana. Mix it well to form dough consistency mixture. If it becomes sticky then add 1 or 2 tbsp rajgira atta.

Step 4

Apply oil on your palms to make flatten patties of the mixture. Lastlydeep fry in hot oil on medium flame until it turns golden.


Enjoy hot and spicy Sabunana vada with curd or green chutney.

Lauki Halwa in Microwave

Lauki halwa is one of the India's classical dessert. It is very nutritious and delicious too. Lauki is widely known as bottle gourd,  dodhi, ghia etc. Lauki is 92% water and one of the healthiest vegetables around. It is very easy to prepared and required only few ingredients.

Ingredients
  • 2 cups lauki peeled and shredded
  • 1 cup milk powder ( or khoya)
  • 2 tbsp ghee
  • 1/2 cup sugar
  • 1/2 tsp cardamom powder
  • 1 tbsp each cashew nuts, raisins and  chopped almonds (dry fruits)
Method
Step 1:-
Peel and shredd the lauki, then squeeze it to remove access water and keep aside. 
Step 2:-
Take a microwaveable glass bowl. Add 2 tbsp of ghee add above mentioned dry fruits to microwave it for 2 mins.
Step 3:-
After then remove all the dry fruits from the melted ghee and keep a side. Then add lauki to ghee and microwave it for 2 mins.
Step 4:-
Add 1 cup of milk powder, 1/2 cup of sugar and mix  well to microwave it for 8-10 min. After 4 mins check it and mix well.
Step 5:-
Microwave it until the mixture becomes sticky dough and then add cardamon powder as well as fried dry fruits.
Enjoy healthy and tasty luaki halwa either hot or at room temperature.

King of street food

"PAV BAHJI" is iconic street food and one of my favorite too. Its a spicy veggie recipe serve with Indian bread commonly know as pav. It’s one of the best ways to feed your kids with plenty of veggies and bread. Try out its recipe.


Ingredients:-

  • Potatoes 2 medium size

  • Tomatoes 2 medium size

  • Onions 3 medium size

  • Ginger 1 inch piece

  • Garlic 8-10 cloves

  • Cauliflower 1/4 small (appx 100gms)
  • Carrot 1 
  • Green capsicum 1/2 medium size

  • Green peas shelled 1/4 cup

  • Fresh coriander leaves 1/4 cup

  • Lemons 1

  • Oil 3 tablespoons

  • Salt to taste

  • Turmeric powder
  • Kashmiri red chilli powder
  • Pav bhaji masala 1 & 1/2 tablespoons

  • Butter 3-4 tablespoons

  • Pav 



Method:-

For Pav

Take flat nonstick tava, add butter to it. Once butter starts melting put sliced pav on it and fry for a minute or a half. 

For the bhaji


Step 1
Boil potato, carrot, green peas, cauliflower in a pressure cooker ( till 2 whistle).
 
Step 2
Heat the 2 tbsp butter and  1 tbsp oil in a kadhai or nonstick pan then add ginger-garlic paste and sauté it for a minute.

Step 3
Add the finely chopped onions and sauté for 3 to 4 minutes till it become translucent.

Step 4Add the capsicum and sauté for 1 more minute. Then add finely chopped tomatoes and allow to cook for 3 to 4 minutes.

Step 5

Now its time for seasoning so add salt to taste, 1 & 1/2 tbsp pav bhaji masala, 1/2 tbsp chilli powder and 1/2 tsp turmeric powder and cook for another 1 or 2 minutes.

Step 6
Mash all the boiled vegetables and add it to gravy. Then add water and mix it well with the help of a masher. Allow to cook for another 2-3 min.

Step 7Finally add finely chopped coriander and  lemon juice (1 lemon) mix well. Garnish it with onion and coriander leaves  and enjoy delicious bhaji with buttered pav.

Mango Delight

Hello everyone, 
Its a month of May and summer time too. Whatelse can be the best option to beat heat other than Mango. It is one of the most popular fruit in the world. Due to its unique flavor, fragrance and taste it is called king of fruits. It also contain an abundance of vitamins, minerals and antioxidants that assure your optimum health. So, lets prepare easy and quick homemade sweet from mango. Kalakand is very well know sweet and today will share recipe of "Mango Kalakand".



Ingredients :
  • Mango Pulp  1 1/2 cup
  • Condensed milk  1 cup
  •  Paneer  200 gms 
  • Green Cardamom Powder : 1/4 tsp
  • Ghee 1 tbsp 
  • Chopped almond, cashew nuts


Method :

Step 1 :-

In a non stick pan heat 1 1/2 cup of fresh mango ( preferred alphanso) pulp for 4-5 minutes, till it starts reducing.

Step 2:-

Add crumbled paneer (preferred homemade paneer but ready made can be used) and condense milk to it. Cook untill the water content is reduced and  starts leaving sides of the pan (approximately it will take 10 min).

Step 3:-

Then add cardamom powder, chopped cashew nuts and  mix it well.

Step 4:-

Take a plate and grease it with ghee. Take out the mixture on the plate and spread it evenly to form approximate half inch log. Garnish it with almond. Allow it to cool down completely and cut it into desired shape.

Enjoy it with your near and dear ones.

Holi Special Instant Jalebi

Holi is a festival of love, colour and happiness. In my country every festival is incomplete without sweets. So lets celebrate this holi with very famous and mouth watering sweet named "Jalebi". It is very simple and instant recipe.


Ingredients:-

  • All purpose flour (maida) 1 cup
  • Yogurt 3 tbsp
  • Ghee
  • Sugar 
  • Baking Podwer 1 tsp
  • Sugar 2 cups
  • Water 2-3 cups
  • Saffron (kesar) 
  • orange colour (optional)


Method:-


Step 1

Take 1 cup of all purpose flour (maida) in a mixing  bowl. Add 3 tbsp of yogurt, 1 tsp of baking powder, 3-4 drops of orange colour to it. With sufficient amount water (approx 1/2 cup) form smooth and pouring consistency batter. Give it a rest for 10 min.

Step 2

Meanwhile we will prepare sugar syrup. For that take a non stick pan add equal amount of sugar and water (each 2 cups). Allow it to boil on high flame till sugar dissolved (stir occasionally ) and syrup reaches one strand consistency. Lastly add few strands of saffron.

Step 3

Heat sufficient ghee (approx 1 cup) in a flat nonstick pan on medium flame. 

Step 4

Take a jalebi maker jar and pour the batter into it. To deep fry on a low flame, squeeze round spirals into the hot ghee. Flip it over gently with spatula till it became golden and crisp.

Step 5

Remove and soak in lukewarm sugar syrup for 30 to 40 sec. Take them out of syrup and enjoy hot, crispy Jalebi.

Pink Paratha

Word "Pink" has become a revolution after bollywood movie named "Pink". So lets bring some revolution in our diet too by including "Pink Paratha". This recipe is very rich in various vitamins and minerals like magnesium, phosphorus, vitamin C, iron, vitamin A, vitamin B1, B2, B6 etc. As it a wholesome food you can incorporate this recipe either in your breakfast, lunch or dinner.



Ingredients:-


For Dough



  • 1 cup whole wheat flour
  • 1 tbsp oil
  • salt to taste
For stuffing
  • 1 beetroot grated
  • 1 carrot grated
  • 2 tbsp chopped green bell pepper
  • 50 gms Paneer
  • salt to taste
  • black pepper powder
  • whole spices-: 1 inch cinnamon, 4 cloves, 1 bay leaf
  • oregano
  • 1 tbsp oil
Method

1. Dough:-  

  • For that we will take 1 cup of whole wheat flour in a bowl. Add 2 tbsp oil and salt to taste. Add required water to knead semi stiff dough and allow to rest for 10 to 15 min.

2.  Stuffing:-

  • Heat 1 tbsp of oil in a non stick pan. Add whole spices ( 1 inch cinnamon, 4 cloves, 1 bay leaf) and saute it till start releasing its aroma.
  • Now add to it 1 (medium size) grated beetroot and carrot. Saute it for a min, then add 2 tbsp finely chopped green bell pepper (capsicum) and crumble 50 gms panner.
  • For seasoning we will add 1 tsp black pepper powder, 1 tsp oregano and salt to taste.
  • Mix it well and switch off the flame and allow it to cool down at room temperature.
3. Paratha:-
  • Now to make paratha we will take one portion of  dough. Then roll it into a circle ( small thick roti approximate 3 to 4 inch diameter.
  • Put 1 to 2 tbsp of stuffing on it and bring all the sides of roti in the center to seal it.
  • With the help of smoe wheat flour roll it into a stuff paratha (roti).
  • Heat a non stick tava and cook the paratha on both the side using oil/ ghee until you observe golden brown spots on it.
Enjoy yummy and nutritious Pink Paratha with curd / boondi raita / vegetable raita.
