Khandvi in microwave

Hello everyone, today I am going to share delicious and healthy snack from the Gujarati cuisine.  And it is called "Khandvi". It is smooth, spiced & seasoned gram flour rolls melts in mouth.

Ingredients

1. 1 cup gram flour
2. 1 cup curd
3. 11/2 cup water
4. 1/2 tsp turmeric powder
5. 1/2 tso asafoetida
6. Salt
7. 1 &1/2 tbs oil
8. 1/2 tsp mustard seed
9. Fresh grated coconut for garnishing
10. Hand full of coriander leaves for garnishing
11. Green chillies
Method

Step 1
Take a microwave safe bowl. Sieve gram flour to avoid lumps.

Step 2
Add curd to it and mix it properly to get uniform mixture.

Step 3
Add salt, turmeric powder, asafoetida and water. Give a mix to form running batter as you can see in the picture.

Step 4
Now microwave mixture for 3 minutes. Then take it out and again give it a mix. Here you will notice that batter will get thicken.

Step 5
Meanwhile we get ready with tempering. For that heat oil in a pan add mustard seeds and green chillies ( as per taste) and turn off the flame after seeds cracked.

Step 6
Again microwave it for 2 more minutes. To check that our batter is perfect or not we have to do a test. Take a spoon and on the back side of spoon apply very thin layer of batter. Allow it to cool for few seconds, once it is done try to peel it off from spoon's surface. If you can able to peel it off easy then our batter it ready. Otherwise you have to microwave it for approximately 30 sec more.

Step 7
This is very important and crucial step. On a clean kitchen table top or on the back side of any steel plate, put some portion of batter and immediately spread it like a thin sheet with the help of any flat spatula. Repeat the same process for rest of the batter. ( As shown in picture)

Step 8
With the help of brush apply tempering we have prepared to the spread. And sprinkle some coriander leaves as well as grated coconut on it. ( As shown in the picture)

Step 9
Make vertical cut to the spread at approximately 2 inches apart. Then peel the spread from the lower end then roll it till the top end and put it in the plate. Repeat the same for rest of the spread.

Step 10
Apply the tempering to the prepared rolls and garnish with coriander leaves as well as grated coconut. Enjoy super soft and yummy khandvi with your dear and near ones.

Christmas Cookies

Hello everyone, Merry Christmas!!! For this festive season today I am going to share with you all a very easy and quick recipe of Christmas cookies. 

Ingredients

1. 1 1/2 cup all purpose flour

2. 1/2 cup melted butter

3. 3 /4 cup powdered sugar

4.1 1/2 tsp baking powder

5. 1/2 tsp baking soda

6. 2-3 tbs milk

7. 1 ½ tsp vanilla extract


Method

Step 1

In a mixing bowl take butter and add sugar to it. Beat them until butter becomes light and fluffy. ( This is very important step as final outcome depends on this beating process)

Step 2

Next sieve all dry ingredients. Get the mixture together without applying much pressure. Add 2-3 tbs milk to form semi soft dough.

Step 3

Divide dough into three equal parts. Add red food colour into one of them and green colour into other one. Finally we get red, green and white colour dough.

Step 4

Take a small portion of cookie dough and flatten it with your fingers and make desire shape of cookies.

Step 5

Repeat step 3 for the rest of the dough to form small cookies. With these measurements approximately you can make 12-14 cookies.

Step 6

Preheat oven at 200* C. Bake the prepared cookies for 15-20 mins.
