Khandvi in microwave

Hello everyone, today I am going to share delicious and healthy snack from the Gujarati cuisine.  And it is called "Khandvi". It is smooth, spiced & seasoned gram flour rolls melts in mouth.

Ingredients

1. 1 cup gram flour
2. 1 cup curd
3. 11/2 cup water
4. 1/2 tsp turmeric powder
5. 1/2 tso asafoetida
6. Salt
7. 1 &1/2 tbs oil
8. 1/2 tsp mustard seed
9. Fresh grated coconut for garnishing
10. Hand full of coriander leaves for garnishing
11. Green chillies
Method

Step 1
Take a microwave safe bowl. Sieve gram flour to avoid lumps.

Step 2
Add curd to it and mix it properly to get uniform mixture.

Step 3
Add salt, turmeric powder, asafoetida and water. Give a mix to form running batter as you can see in the picture.

Step 4
Now microwave mixture for 3 minutes. Then take it out and again give it a mix. Here you will notice that batter will get thicken.

Step 5
Meanwhile we get ready with tempering. For that heat oil in a pan add mustard seeds and green chillies ( as per taste) and turn off the flame after seeds cracked.

Step 6
Again microwave it for 2 more minutes. To check that our batter is perfect or not we have to do a test. Take a spoon and on the back side of spoon apply very thin layer of batter. Allow it to cool for few seconds, once it is done try to peel it off from spoon's surface. If you can able to peel it off easy then our batter it ready. Otherwise you have to microwave it for approximately 30 sec more.

Step 7
This is very important and crucial step. On a clean kitchen table top or on the back side of any steel plate, put some portion of batter and immediately spread it like a thin sheet with the help of any flat spatula. Repeat the same process for rest of the batter. ( As shown in picture)

Step 8
With the help of brush apply tempering we have prepared to the spread. And sprinkle some coriander leaves as well as grated coconut on it. ( As shown in the picture)

Step 9
Make vertical cut to the spread at approximately 2 inches apart. Then peel the spread from the lower end then roll it till the top end and put it in the plate. Repeat the same for rest of the spread.

Step 10
Apply the tempering to the prepared rolls and garnish with coriander leaves as well as grated coconut. Enjoy super soft and yummy khandvi with your dear and near ones.

Christmas Cookies

Hello everyone, Merry Christmas!!! For this festive season today I am going to share with you all a very easy and quick recipe of Christmas cookies. 

Ingredients

1. 1 1/2 cup all purpose flour

2. 1/2 cup melted butter

3. 3 /4 cup powdered sugar

4.1 1/2 tsp baking powder

5. 1/2 tsp baking soda

6. 2-3 tbs milk

7. 1 ½ tsp vanilla extract


Method

Step 1

In a mixing bowl take butter and add sugar to it. Beat them until butter becomes light and fluffy. ( This is very important step as final outcome depends on this beating process)

Step 2

Next sieve all dry ingredients. Get the mixture together without applying much pressure. Add 2-3 tbs milk to form semi soft dough.

Step 3

Divide dough into three equal parts. Add red food colour into one of them and green colour into other one. Finally we get red, green and white colour dough.

Step 4

Take a small portion of cookie dough and flatten it with your fingers and make desire shape of cookies.

Step 5

Repeat step 3 for the rest of the dough to form small cookies. With these measurements approximately you can make 12-14 cookies.

Step 6

Preheat oven at 200* C. Bake the prepared cookies for 15-20 mins.

Vegan sugar free oats kheer

Hi everyone today I am going to share will you all a recipe of vegan dessert. Its different version of very famous Indian dessert  called "Kheer". 

Ingridents:-
  • 1/4 cup Oats
  • 1 cup coconut Milk
  • 1/4 cup Water
  • 1 tsp Ghee
  • 3 tbsp Honey
  • 2-3 Saffron strands
  • 1/4 tsp cardomon powder
  • 1/8 tsp nutmeg powder
  • 3 Almonds sliced
  • 3 Pistachios sliced   

Method:-

Step1
In pan roast 1/4 cup oats with 1 tsp ghee until oats colour changes to light brown. (appox 1-2 min)

Step 2
Next in a seperate pan add coconut milk  and allow it to boil for 2 mins. Then add water to it and allow it to boil it 15 mins

Step 3
Add oats to the milk and simmer it until it soften (appox 5-7 mins).

Step 4
Add 2-3 saffron strands, cardomon powder,  nutmeg powder, sliced almond and pistachios. Mix well.

Step 5
Lastly  switch off the flame and then add honey.

Garnish it with chopped almonds and pistachios. Vegan oats kheer is ready.

Guava punch

Hi everyone, today I will share with you a different and quick mocktail recipe. I called it as Guava Punch. It is very easy and refreshing drink you can serve to your guest. Here is the recipe.

Ingredients:-
1. Guava juice
2. Sprite
3. Chat masala
4. Mint leaves
5. Lemon juice
Method
Step 1:-
Take a glass, add 1/4 cup of guava juice. 
Step 2:-
Add 1/4 tsp of chat masala, 2-3 finely chopped mint leaves and 1/4 tsp of lemon juice.
Step 3:-
Finally add 3/4 cup of sprite and give it a mix.
Garnish the drink with lemon or mint leaves and enjoy this refreshing drink with your dear and near ones.

Rasmalai cake shots

Hello everyone, today i am going to share with you a differnt and innovative version of rasmalai cake.  I made it on the auspicious occassion of Ganesh chaturthi.And it is called "Rasmalai cake shots". Very easy to make and serve too. 


Ingredients:-

1. Rasmalai 12 pieces
2. 3/4 cup Wheat flour
3. 3/4 cup Caster sugar
4. 1 tbs milk powder
5. 1/2 tsp baking powder
6. 1/4 tsp baking soda
7. 5 tbs oil
8. 3/4 cup milk
9. 1/2 tsp vinegar 
10. 1/2 tsp cardamom essence
11. 3/4 tsp cardamom powder
12. 6- 7 saffron strands
13. 10 finely chopped pistachios

Method:-

Rasmalai cake crumble

Step 1

Take a kadhai and add 1 cup of salt, allow it to preheat on slow flame with closed lid.

Meanwhile take a mixing bowl, sieve all the dry ingredients and they are wheat flour, caster sugar, milk powder, baking powder and baking soda properly to avoid lumps.

Step 2

Add oil and cardamom essence to the mixture of dry ingredients. Next gradually add  milk to it and mix it with the help of whisker. Just mix it untill all ingredients combined properly (do not over mix). 

Step 3

Add  vinegar and 1/2 tsp cardamom powder to give final mix. 

Step 4

Grease the mould with oil and put baking paper into it. Add batter upto 3/4 level in the mould and tap it for two times. 

Step 5

Allow it to bake in preheated kadhai on slow flame for 25 min. Then run toothpick test whether rasmalai cake is ready or not. If not then wait for 5 more mins. Baking time will be approximately 25 to 30 mins. Allow it to cool down to unmould make its crumble. 

Whipped cream

Step 1

Take a chilled mixing bowl, add whipped cream, 1/4 tsp cardamom powder,  drops of cardamom essence and 6-7 saffron strands into it. Whipped it with electric beater  until it forms sharp peak. If whipped cream is done then it won't fall if you invert the mixing bowl.

Assemble Rasmalai cake shots 

1. Take 12 shot glasses. 
2. First layer will be of rasamali cake sponge crumble.
3. For second layer add milk portion of rasmalai that we have taken so that it will soak cake crumbles.
4. Third layer will be of whipped cream.
5. Fourth and final layer will be of rasmalai peice.
Then finally garnish it will saffron strands and chopped pistachios.

Dalgona Cake

 Coffee originates from South Korea. The name is "Dalgona" derived from a Korean sugar sweet. Most dalgona coffee doesn't actually contain dalgona But just because of its resemblance taste and appearance they name it as dalgona coffee Recently it has made waves on social media during pendamic. It is creamy coffee mixture  that is actually made by whipping equal amount of coffee, sugar and water. After I encountered so many posts of Dalgona coffee, I thought of making Dalgona cake. For that I baked a coffee cake and decorated it with Dalgona coffee cream.

Ingredients:-

 For cake
1. 1 cup Wheat flour
2. 1 cup powdered sugar
3. 2 tbs coffee powder
4. 1 tsp baking powder
5. 1/2 tsp baking soda
6. 6 tbs oil
7. 1 cup milk
8. 1 tbs vinegar 
9. 1 tsp vanilla extract 

Dalgona coffee mixture

1. 1/4 cup coffee powder
2. 1/4 cup sugar
3. 1/4 cup water

Method:-

Step 1

Take a mixing bowl, sieve all the dry ingredients and they are wheat flour, sugar, coffee powder, baking powder and baking soda properly to avoid lumps.

Step 2

Add oil and vanilla extract to the mixture of dry ingredients. Next gradually add  milk to it and mix it with the help of whisker. Just mix it untill all ingredients combined properly (do not over mix). 

Step 3

Add  vinegar to give final mix. Cake batter is ready.

Step 4

Grease the  moulds with oil and put baking paper into it. Add batter upto 3/4 level in the moulds and tap it for two times. 

Step 5

Allow it to bake in preheated oven at 180`c for 25-30 min. Then run toothpick test whether cake are ready or not. If not then wait for 5 more mins. Baking time will be approximately 25 to 30 mins. Allow it  to cool down and then unmould. 

Step 6

For Dalgona coffee mixture:-
In a mixing bowl add coffee powder, sugar and water. Using electric beater whipped it until it becomes creamy, silky smooth and stuff peak have formed. If the peaks fall over, keep whisking for another minute or so.

Step 7

Cover the baked cake with dalgona coffee mixer as you desire. This cake is not ment for smooth forsting so just apply dalgona coffee mixture as you wish.
Enjoy super healthy and delicious wheat flour Dalgona coffee cake.

Wheat flour Goodday Biscuits

Welcome to lockdown baking. Its a real challenge when you have limited resources and at the end you have to make your kids happy. So here is an easy and healthy option of a cookie I would like to share with my readers.

Ingredients

1. 1 cup wheat flour
2. 1/2 cup butter
3. 1/2 cup powdered sugar
4. 1/4 cup cashew nuts
5. 2 pinch cardamom powder
6. 1 tbs corn flour

Method

Step 1:-

 In a mixing bowl take salt butter at room temperature and add sugar to it. Beat them until butter become light in color and fluffy. ( This is very important step as final outcome depends on this beating process)

Step 2:-

Next sieve wheat flour and corn flour to it. Add cardamom powder and coaresly crushed cashew nuts. Then to form a semi soft dough get the mixture together without applying much pressure.
( If u find your dough hard just add additional melted butter to form semi soft dough)

Step 3:-

Take small portion of cookie dough and flatten it with your fingers then press gently using toothpick to make desire design.

Step 4:- 

Repeat step 3 for rest of the dough to form small cookies. With these measurements approximately you can make 12-14 cookies.

Step 5:-

Pre heat oven at 180* C. Bake the prepared cookies for 18-20 mins. Enjoy homemade healthy cookies with hot tea or coffee.

Makhani Pasta

Hello everyone,
Today I am going share with you a fusion pasta recipe inspired by Indian flavors. Pasta combined with creamy makhani gravy and it taste heavenly.  I called it as "Makhani Pasta" .

Ingredients:-

1. 2 &1/2 cup boiled pasta
2. 2 medium size tomatoes
3. 2 medium size onion
4. 2-3 garlic cloves
5. 5-6 cashew nuts
6. 1 whole red chilli
7. 1/2 tsp cumin seeds
8. 1/2 tsp turmeric powder
9. 1/2 tsp coriander powder
10. 1/2 tsp garam masala
11. Salt as per taste
12. 1/4 cup cheese
13. 1 tsp oregano
14. 2 tbs butter
15. 1/4 cup milk
16. 1/4 to 1/2 cup water
17. 3 tsp corn flour
18. 1 tsp of dried fengreek leaves

Method
Step 1 :- To cook pasta

Take a kadhai or a broad vessel and boil pasta of your choice in sufficient amount of water by adding salt and 1/2 tsp oil. Once it is cooked drain the excess water  and keep it a side.

Step 2 :- Making pasta Sauce

1. Take pan keep it on a medium flame, add butter and then add cumin seeds, whole red chilli, chopped garlic and onion. Satute it for a min and then add tomatoes and cashew nuts as well as 1/4 cup of water.

2. Now for seasoning add turmeric powder, coriander powder, garam masala and salt to taste. Cook it for 2-3 mins. Allow mixture  to cool completely and grind it to form smooth pasta sauce.

Step 3  : Making pasta

1. Put a pan on medium flame. Add 1 tbs butter and saute diced green bell pepper for 30 sec. Add the prepared makhani pasta sauce and cheese.

2. Take a small bowl and make corn flour slurry using milk. And add it to pasta sauce. Stir it continuously until sauce get thickens. 

3. Add oregano and dried fengreek leaves to enhance it's flavour. Finally add boiled pasta and tossed it in the sauce. 

Enjoy yummy pasta with your dear and near ones.

Instant Mango Rabdi

Hello everyone, today I  am going to share with you all very easy and instant recipe of famous Indian dessert called " Rabdi" with a fresh mango flavour.

Ingredients
1. Milk 1 ltr
2. Sugar 6 tbs
3. Bread crumbs of 4 bread
4. Milk powder 8 tbs
5. Mangoes 2 
5. Cardamom powder 1/2 tsp
6. Saffron strands 7-8
7. Sliced almonds

Method
Step 1
Take a broad vessel like kadhai. Add 1 liter of full fat milk and allow it to boil for 5 mins on medium flame.
Step 2
Take 4 breads, cut it edges and make bread crumbs in a mixer jar. Once milk comes to boil at bread crumbs and stir it continuously to avoid lumps. Allow it to boil for another 3-4 mins.
 Step 3
Add sugar, cardomom powder, saffron, slice almond and milk powder at this stage. Milk powder will enhence the texture and taste of the Rabri. Switch off the flame after it  get thickens. Allow it to cool down at room temperature.
Step 4
Make puree of 1 & 1/2 mango and keep some of its cubes aside. Add mango puree to Rabdi as well it's cubes and give it a mix. Refrigerate it for couple of hours and then enjoy it will your dear and near ones.

Oats Pizza

Hello everyone! I would like to ask a question to my readers. What if you are craving for pizza and you are on weight loss regime. Today's Oats pizza recipe is a solution for it. I love oats because they are a good source of fiber. The star of this oat pizza crust is… OATS. I know an oats pizza crust might sound a little bizarre, but it is healthy and tasty too. 

Ingredients

1. 1/2 cup Oats
2.  3 tbs semolina
3.  3 tbs curd
4. Salt
5. Oil
6. Oregano
7. 1 tbs pizza sauce
8. Veggies( Bell pepper, onion, tomatoes, corn)
9. Paneer
10. water
Method

Step 1

Making pizza base

Roast and coresly grind Oats. Add semolina, salt (as per taste) and,curd to it. Make smooth batter by adding approximately 1/4 cup of water. Give it a rest for 10 mins.

Step 2

Take non stick pan grease it with oil and spread the batter evenly to make a pizza base.  Cover it with the lid and allow it to cook on a slow flame for approximately 3 mins. Once it is done change the flame to high for 40-45 sec so that side of base will become crispy.

Step 3

Flip the base and make space to that side by pricking it with fork. Then apply the pizza sauce evenly and arrange all the veggies as per the choice and sprinkles some salt. Put some crumbled paneer and add oregano. Close it and allow it to cook for 2 mins on slow flame. Once it is done again put it on high flame for 30 sec.

Yummy oats pizza is ready.

Apple salad with walnuts and raisins


Apple is one of my favourite fruit. Today i am going to share a very healthy, delicious and fulfilling  apple salad recipe. My family and friends really enjoy this salad. Adding curd increases protein content and nuts will balance the crunchiness.

Ingredients

1. 2 Apples
2. 3 tbs Curd
3. 2 tbs Walnuts
4. 1 tbs Raisins
5. 1 tbs Mint leaves
6. 1 tbs Coriander leaves
7. 1 tsp Honey
8. Salt to taste
9. 1/2 tsp chat masala

Method

Step 1:
Peel and cut 2 medium size apples and add it to mixing bowl.

Step 2:
Remove excess water from curd (no need of hung curd) and add it to mixing bowl.

Step3 :
Add walnuts, raisins, mint leaves, coriander leaves, honey, chat masala and salt to the bowl, then toss it or mix it gently.
Refrigerate it for half an hour and enjoy chilled and yummy apple salad.

Green Peas Baked Kachori

Kachori is one of the famous indian spicy snack loved by all. Generally kachoris are deep fried breads made with varitey of stuffing filled into a cover of all purpose flour (maida).  But here i have tried to make this recipe healthier so will bake the kachoris with the stuffing of fresh green peas wheat flour cover. 

Ingredients

For Dough:

1. 1 cup wheat flour
2. 2 tbs semolina (Sooji)
3. 1 tbs oil
4.  3 tbs curd
5. water
6. 1/2  tsp baking powder
7. 1/4 tsp backing soda
8. salt 


For stuffing:

1. 2 cup coarsely crushed green peas
2. 1 medium size boiled potato
3. 1 inch Ginger
4. 4-5 cloves garlic
5. 2 Green chillies
6. 1 finely chopped Onion
7. 1/2 tsp asafoetida (hing)
8. 1 tsp cumin seeds
9. 2 cloves
10. 1/2 inch Cinnamon stick
11. salt
12. 2 tbs oil
13. 1 tsp garam masala
14. 1 tsp lemon juice


Method

Step 1:-

To prepare Dough

Combine all the mentioned dough ingredients and form a soft dough using water and then give it a rest for 1 hour.

Step 2:-

For stuffing

1. Heat the oil in a broad pan and add cumin seeds, asafoetida, cloves and cinnamon stick.

2. Once the seeds crackle, add finely chopped onion and saute it for a min.

3. Make a paste of garlic, ginger, green chillies in a mixture jar and add to the pan.

4. Add coarsely crushed green peas, salt to taste, garam masala and smashed boiled potato. Mix them well and cook it for 4-5 mins while stirring occasionally. Once it is cooked colour of mixture changes from light green to dark green. It is an indication that stuffing is ready so turn off the flame. Lastly add lemon juice and mix it well. Allow it to cool down to room temperature.

Step 3:-

Making kachori

1. Divide stuffing and dough into small equal portion.

2. Take a portion of dough and roll it out into small puris.

3. Put a portion of stuffing in the centre and bring the sides together to seal the edges on the top.

4. Repeat these  steps to make more kachoris and keep a side.

Step 4:-

Pre heat oven at 200* C. Bake the prepared kachoris for 18- 20 mins. Enjoy hot and spicy green peas kachoris with green chutney or tomato ketchup.

Hare pyaaz ki sabji

Today again I am back with another winter recipe. It is very easy and delicious recipe. It is a combination of spring onion and besan sev. So let's start with it.


Ingredients:-

1. Spring onion 500 gm
2. 1/2 cup besan sev
3. 2 tbs oil
4. Asafetida (Hing)
5. Salt
6. 1/2 tsp Turmeric powder
7. 1/2 tsp red chilli powder
8. 1/2 tsp cumin seeds

Method

Step 1:-
Take a kadhai put it on a medium flame, add oil and cumin seeds. Once they start cracking,  add hing, turmeric powder, chilli powder and finely chopped spring onion. 

Step 2:-
After 1 min add salt and give it a mix.  Allow it to cook for 5 mins.

Step 3:-
Once it is cooked add besan sev and give it final mix. Switch off the flame. Enjoy hot and spicy hare pyaaz ki sabji with roti or bajra roti.

Gujarati Undhiyu

Undhiyu very famous and  it is the hallmark of Gujarati cuisine. It is a one pot vegetable casserole dish and healthy too. It is generally made during winters in Gujarat. Because some of the veggies added in it are only available in the winter season. Undhiyu is a combination of root veggies like purple yam, regular yam, sweet potatoes, baby potatoes and green veggies like  small brinjals, raw or ripe bananas, fenugreek leaves, indian flat beans, fresh pigeon peas (tuvar lilva), you can also add fresh green peas or fresh chickpeas. It needs lot of time and patience. Basically the veggies are cooked or fried in batches. So lets start with its recipe.



Method:-

Step 1:-

Cook root veggies

Take all the root veggies ( purple yam, regular yam, sweet potatoes, baby potatoes) peel them and cut it into medium size pieces. (quantity is not fix it  depends on your personal choices)

Step 2:-

Cook green beans 

Take all green beans you have (indian flat beans 1 cup , fresh pigeon peas 1/2 cup and fresh green peas 1/2 cup). After stringing and halving them, cook them in a pressure cooker with 3 whistle. Then with the help of strainer remove the excess water from veggies and keep it aside.

Step 3:-

Making Methi Muthiya

Take 1 cup of finely chopped fenugreek leaves or methi leaves in a mixing bowl. Add 1/4 cup of wheat flour and 1/4 cup of gram flour (besan). Then for seasoning add 2 pinch of hing, 1/2 tsp turmeric powder, 1/2 tsp red chilly powder, 1 tsp coriander and cummin powder, 2 pinch of soda, 1 tsp of lime juice and salt to taste. Finally add 1 tbs of oil and knead a dove with help of water. 
Make small balls of the prepared dove. Either you can deep fry the muthiya or you can steam them.

Step 4:-

Preparing coriander leaves mixture
Take a mixer jar add 4 tbs of desiccated coconut powder, 1 tbs ground nut, 1 tbs sesame seeds, 2 inch fresh ginger, 2 green chilies and grind it properly. Take it out in a mixing bowl, add 3tbs of gram flour (besan), 1 cup of coriander leaves. Now its time to do seasoning for entire undhiyu so add red chilly powder, turmeric powder, hing, salt, sugar and lime juice. Mix well and keep it aside.

Step 5:-

Mixing all the elements for final undhiyu
Take a large kadhai and put it on the stove. Add 4 tbp of oil,  1tsp of mustard seeds, 1/2 tsp of hing and cook the cutted brinjal. Then make a layer cooked roots veggies (step 1). Third make a layer of cooked green veggies (step 2). Then make a layer methi muthiya (step 3) and also add here raw or riped banana. Lastly make a layer of coriander leaves mixture and cover the kadai with lid. Leave it on a slow flame of 5 - mins and then lastly give it a gentle mix without breaking veggies and muthiya. Finally enjoy hot and spicy undhiyu with poori or roti.
