Motichoor cheese cake shots

Happy Ganesh chaturthi...Why does ganpati have to be always about ladoo and modak. Let's try something new on this auspicious occasion.

Ingredients:-

1. Motichoor ladoo - 5
2. Cheese cream 1 cup
3. Hung curd 1 cup
4. Honey 4 tbs
5. Digestive biscuits - 10
6. Cardamon powder 2 pinch
7. Saffron 1pinch
8. Butter 2 tbs
9. Pistachios

Method:-

Step 1
Make  crumble of motichoor ladoos.

Step 2
Make powder of digestive biscuits then add butter to form a lumping mixture.

Step 3
In a mixing bowl add cheese cream, hung curd, honey , cardamon powder, saffron and beat it with electric beater until mixture gets smooth and thicken texture.

Step 4
This is very important step.
In a shot glass first make even layer of biscuits crumble. Then second layer will be of cream mixture. Lastly the top layer will of crumble motichoor  laddoo . Garnish it with pistachios to have a perfect look.

Orange and Choco Biscuits Pudding

Hello friends, Today I am going to share with you a very easy and quick dessert recipe. Its a combination of fruits and biscuits. 

Ingredients:-

1. 2 cup fresh Orange juice
2. 4 tbs Custard powder
3. Hide and seek chocolate cream biscuits
4. Sugar
5 . Milk
6. Whipped cream

Method:-

Step 1
Dissolve custard powder in 2 cups fresh orange juice. Take a sauce pan and  cook it on slow flame. Add 4-7 tbs sugar depends upon the taste of oranges (If you want to use ready orange juice then add less sugar). Continuously stir the mixture until it starts thickening. Allow the orange custard to cool down at room temperature.

Step 2
Take rectangle or square glass container as per your requirement in which we will set our pudding. Take 1/2 cup of milk in a bowl.

Step 3
Soak a biscuit in the milk and arrange it in a glass container. Repeat the same until you form a layer of biscuits.

Step 4
Then on it pour the orange custard such that it fully covered biscuits layer.

Step 5
Repeat step 3 and 4 simultaneously to form second layer of biscuits and orange custard.

Step 6
Spread the whipped cream evenly on it. And  garnish the pudding with orange custard. Refrigerate it for 6-7 hours. Enjoy yummy orange and chocolate biscuits pudding with your dear and near ones.

Holi special- Strawberry Basundi

Happy holi to all my readers. On holi, which is also called as festival of colour, i had made this super delicious colourful sweet called "strawberry basundi". Its recipe as follow:-

Ingredients:-

  • 1 ltr Milk
  • 5 tbs Sugar
  • 1/4 tsp crushed cardamom powder
  • 2 tsp sliced almonds
  • 2 tsp sliced pistachios
  • 1/2 cup Strawberry puree
  • 1/4 cup finely chopped strawberries
  • Ghee


Method:-

Step 1
Take a kadai (preferred nonstick one) and grease it properly with ghee so when you boil milk, it wont stick at the bottom. Then pour 1 ltr of milk in it and allow it to boil on medium high flame.
Step 2
Once milk comes to boil reduce the flame to low and keep it constant. When the milk starts froth or form a layer of cream or malai on top use spatula to scrap it's side. It is a continuous process so keep on simmering the milk, occasionally stir the milk so it wont get burnt and stick to the bottom of kadai.

Step 3
Approximately after 20-30 min milk get reduce and it colour changes from white to light brown. At this stage add 5 tbs of sugar, 1/4 tsp cardamom powder,  sliced almonds, pistachios.

Step 4
Scrape small cream chunks collected on the side of pan into milk (this will make delicious small cream chunks). Turn off the flame and allow it to cool down to room temperature naturally.

Step 5
Add 1/2 cup of strawberry puree to basundi and 1/4 cup finely chopped strawberries , then give it a final mix. If you want to enjoy it chilled then refrigerate it for at least 2 hours before serving.

Stuffed Capsicum Rings

Hello everyone,

As a vegetarian, the very first thing come to my mind when I hear word " barbaque" is paneer. Options are very limited for a vegetarian. So this recipe will increase your menu list for a barbaque party. It is called "Stuffed Capsicum Rings".


Ingredients:-

1. 2 Capsicum 
2. 1 cup boiled and smashed potatoes
3. 1 cup cooked rice
4. 2 green chilly
5. 5-6 curry leaves
6. 1 inch ginger
7. 1 tsp Cumin seeds
8. 4 Cloves
9. 1/2 inch cinnamon
10. 1 tsp Dry mango powder ( amchur)
11. Salt

12. 8-10 Fenugreek seeds
13. 1 tsp Hing (Asafiteda)
14. Handful of coriander leaves
15. 2 tbs Gram flour ( besan)
16. 1tsp Garam masala powder
17. Oil


Method

Step 1
Take 2 medium size capsicum, deseed them and cut in horizontal in a form of ring ( approx height of ring should be 2 cm)

Step 2
We will make a spices mixture. For that in a small mixer jar add cumin seeds, fenugreek seeds, cloves, cinnamon, curry leaves, green chilly and ginger. Grind them to get proper mixture.

Step 3
Stuffing:-
Heat 2 tbsp of oil in a non stick pan. Add Cumins seeds, once it crackles add hing and prepared spices mixture. After it start releasing aroma add equal amount of boiled and smashed potatoes and rice.  Add salt, garam masala powder, dry mango powder, and handful of coriander leaves. Finally add gram flour as  it will act as binding agent. Mix it will to get dough form stuffing and allow it to cool.


Step 4
Take a capsicum ring and fill it tight with stuffing so that while cooking, stuffing should remain intact.

Step 5
Cook these rings on a barbeque pit till it truns golden brown from both the sides. Or else at home you can shallow fry them. Enjoy hot and spicy stuffed capsicum rings with green chutney or any curd dip.

Oats green cheela

Oats is very healthy and versatile grain. Here I will share with you all recipe of oats cheela or pancake with twist of whole green moong. Adding green moong enhances its taste and nurtritional value too.

Ingredients:-

• 1 cup Oats
• 1/2 cup soaked whole green moong
• 2 Garlic cloves
• 10-12 Curry leaves
• 1/4 cup Coriender leaves
• 1” Ginger
• 3 Green chilies
• 1 tsp Cumin seeds
• 1/2 Lemon juice
• Salt as per taste
• 1 cup water
• Ghee

Method:-
Step 1
To prepare batter, in mixer jar add garlic, ginger, curry leaves, coriander leaves, green chillies, cummin seeds, soaked green moong, lemon juice, oats and salt. After that add 1 cup
water to make smooth batter by grinding it.

Step 2
Put non stick tava on medium flame, greese itwith ghee and spread the batter evenly in acircular form to make chella.

Step 3
Allow it to cook untill it edges start leaving tavasurface. Put 2-3 drops of ghee and flip it to cook
other side.

Its ready to serve. Enjoy hot and spicy green oats cheela with green chutney or curd.

Gajjar halwa and custard shots

Gajjar halwa is an India dessert. It is very nutritious and delicious too. Today i will share its recipe with a twist of custard. I had prepared halwa in microwave which is very easy and convenient. 

Ingredients
  • 2 cups gajjar (carrot) shredded
  • 1 cup milk powder 
  • 1 tbsp ghee
  • 1/2 cup sugar and 1 1/2 tbsp 
  • 1/2 tsp cardamom powder
  • 1 tbsp each cashew nuts, raisins and  chopped almonds (dry fruits)
  • 1 cup milk
  • 2 tbsp custard powder
Method
Step 1:-


Take a microwaveable glass bowl. Add 1 tbsp of ghee add above mentioned dry fruits to microwave it for 1 mins.
Step 2:-


After then remove all the dry fruits from the melted ghee and keep a side. Then add carrot to ghee and microwave it for 5 mins.
Step 3:-


Add 1 cup of milk powder, 1/2 cup of sugar and mix  well to microwave it for 10-15 mins. After 5 mins check it and mix well.
Step 4:-


Microwave it until the mixture becomes sticky and it will start leaving glass bowl surface. In the end add cardamon powder as well as fried dry fruits. Gajjar halwa or carrot halwa is ready.
Step 5:-
For custard take 1 cup of milk and dissolve 2 tbs custard powder in it. Then add 1 1/2 tbsp of sugar and on slow flame allow it to boil. It is very important to stir the mixture continuously to avoid lumps so will get thick and smooth custard. Maximum cooking time is 5 min.  and lastly allow it to cool.

Step 6:-

To assemble take shot glasses. There will be 1 layer of custard  sandwich between 2 layers of gajjar halwa. First for bottom layer arrange halwa and refrigerate it for 20 mins. Then for middle layer add custard and again refrigerate it for 20 mins. Lastly for top layer add halwa and garnish it with  almond.
